Jerome uses many old southern Rhone varieties such as Vaccarèse and Counoise. The wine itself has a wonderful aroma of ripe cherries, lavender and Mediterranean herbs, and a savoury meaty character that comes through on the finish. This is a wine designed for a roasted lamb.
